New rootstocks, new planting densities, mechanisation, technology. All true.<br \/>\nBut sometimes innovating also means going backwards.<\/p>\n<p style=\"font-weight: 400\">At Villa Dianella we are reintroducing a historic training system: <strong>the Tuscan capovolto<\/strong>. Not out of nostalgia, but for a concrete reason tied to grape quality and the balance of the vine.<\/p>\n<p><picture><source type=\"image\/avif\" srcset=\"https:\/\/villadianella.it\/wp-content\/uploads\/2026\/02\/image-4.avif 1x\"><source type=\"image\/webp\" srcset=\"https:\/\/villadianella.it\/wp-content\/uploads\/2026\/02\/image-4.webp 1x\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" src=\"https:\/\/villadianella.it\/wp-content\/uploads\/2026\/02\/image-4-1920x0.png\" alt=\"\" width=\"1536\" height=\"1024\"><\/picture><\/p>\n<p style=\"font-weight: 400\"><strong>What Is the Capovolto System?<\/strong><\/p>\n<p style=\"font-weight: 400\">The capovolto is a traditional system widespread in Tuscany until the 1960s\u201370s, before vineyards became heavily mechanised.<br \/>\nThe vine is pruned leaving a long cane, which is bent downward and tied to the wire. This creates a more even distribution of sap and shoots.<\/p>\n<p style=\"font-weight: 400\">In practice, it&#8217;s not the vine that \u201cclimbs\u201d, but the cane that is bent.<\/p>\n<p style=\"font-weight: 400\">It&#8217;s a system that requires:<\/p>\n<ul style=\"font-weight: 400\">\n<li>more manual labour<\/li>\n<li>greater care during pruning<\/li>\n<li>a constant presence in the vineyard<\/li>\n<\/ul>\n<p style=\"font-weight: 400\">It&#8217;s not the simplest system. But it is one of the most balanced.<\/p>\n<p style=\"font-weight: 400\"><strong>Why Go Back to the Capovolto Today?<\/strong><\/p>\n<p style=\"font-weight: 400\">It&#8217;s a fair question: why take up a more demanding system when faster solutions exist?<\/p>\n<p style=\"font-weight: 400\">For three main reasons.<\/p>\n<ol>\n<li style=\"font-weight: 400\"><strong> Natural Management of Vine Vigour<\/strong><\/li>\n<\/ol>\n<p style=\"font-weight: 400\">In vintages like the last few \u2014 with cold springs followed by suddenly hot summers \u2014 managing vigour becomes central.<br \/>\nThe capovolto allows for a more even distribution of shoots and production that&#8217;s less concentrated in a few spots.<\/p>\n<p style=\"font-weight: 400\">This means:<\/p>\n<ul style=\"font-weight: 400\">\n<li>more airy bunches<\/li>\n<li>lower risk of compaction<\/li>\n<li>better phenolic ripening<\/li>\n<\/ul>\n<p style=\"font-weight: 400\">It&#8217;s not a magic formula. It&#8217;s a matter of vegetative balance.<\/p>\n<ol start=\"2\">\n<li style=\"font-weight: 400\"><strong> Better Grape Quality<\/strong><\/li>\n<\/ol>\n<p style=\"font-weight: 400\">A less stressed vine produces more consistent grapes.<br \/>\nThe capovolto makes it possible to:<\/p>\n<ul style=\"font-weight: 400\">\n<li>better modulate the production load<\/li>\n<li>avoid excesses<\/li>\n<li>encourage a more gradual ripening<\/li>\n<\/ul>\n<p style=\"font-weight: 400\">In areas like Vinci, where the climate can swing rapidly, this detail makes the difference.<\/p>\n<ol start=\"3\">\n<li style=\"font-weight: 400\"><strong> Consistency with Organic Viticulture<\/strong><\/li>\n<\/ol>\n<p style=\"font-weight: 400\">Dianella farms <a href=\"https:\/\/villadianella.it\/il-biologico\/\">organically<\/a>.<br \/>\nThe capovolto also helps manage plant health, because it improves ventilation and sun exposure.<\/p>\n<p style=\"font-weight: 400\">Less stagnant humidity means:<\/p>\n<ul style=\"font-weight: 400\">\n<li>lower pressure from fungal diseases<\/li>\n<li>more targeted interventions<\/li>\n<li>greater natural control<\/li>\n<\/ul>\n<p style=\"font-weight: 400\">It doesn&#8217;t eliminate problems. It makes them more manageable.<\/p>\n<p style=\"font-weight: 400\"><strong>Is This a Return to the Past?<\/strong><\/p>\n<p style=\"font-weight: 400\">No. It&#8217;s a technical choice.<\/p>\n<p style=\"font-weight: 400\">We&#8217;re not bringing back the capovolto everywhere.<br \/>\nWe&#8217;re introducing it in selected plots, where we believe it can better express the potential of Sangiovese and some native varieties.<\/p>\n<p style=\"font-weight: 400\">Viticulture isn&#8217;t made of dogmas. It&#8217;s made of observation.<br \/>\nIf a historic solution still works, there&#8217;s no reason to discard it.<\/p>\n<p style=\"font-weight: 400\"><strong>Time as a Deciding Factor<\/strong><\/p>\n<p style=\"font-weight: 400\">The capovolto requires more time spent pruning.<br \/>\nEvery vine needs careful attention. It isn&#8217;t standardised work.<\/p>\n<p style=\"font-weight: 400\">This means:<\/p>\n<ul style=\"font-weight: 400\">\n<li>more time spent in the vineyard<\/li>\n<li>less automatism<\/li>\n<li>deeper knowledge of every single vine<\/li>\n<\/ul>\n<p style=\"font-weight: 400\">On a farm like Dianella, this approach is consistent with our idea of quality: less quantity, more attention.<\/p>\n<p style=\"font-weight: 400\"><strong>What Changes in the Wine?<\/strong><\/p>\n<p style=\"font-weight: 400\">The most honest answer is: we&#8217;ll see over time.<\/p>\n<p style=\"font-weight: 400\">Early impressions point to:<\/p>\n<ul style=\"font-weight: 400\">\n<li>finer tannins<\/li>\n<li>more balanced acidity<\/li>\n<li>more even ripening<\/li>\n<\/ul>\n<p style=\"font-weight: 400\">But wine isn&#8217;t judged by words.
