Villa Dianella proudly presents Maria Vittoria & Ottavia Ancestrale, a “Sur lie” sparkling rosé with a strong, well-defined personality.
The harvest for this Sangiovese is carried out by hand, with a rigorous selection of grapes. Vinification begins with a gentle pressing of the grapes, followed by fermentation in temperature-controlled stainless steel tanks. The heart of the process is the natural second fermentation in the bottle, carried out according to the ancestral method. This technique, which skips “disgorgement”, gives the wine a unique character and extraordinary intensity.
The maturation period involves a long “sur lie” ageing in the bottle, which enriches the wine with texture and complexity. The colour is a bright, delicate pink, slightly hazy, with salmon-coloured hues that light up the glass with poetic reflections.
The nose is a complex, fascinating interplay: fermentative fruity notes blend with peach, citrus and bread crust, all framed by an elegant spiciness. On the palate, Maria Vittoria & Ottavia Ancestrale reveals impeccable freshness and minerality, supported by good acidity and a full, satisfying sip, with a gentle fizz that finely tickles the taste buds.
