February is the ideal time to enjoy warm, genuinely flavoured dishes. For this occasion, chef Alessio Bagnoli offers a first course that combines tradition and creativity: tagliolini in green sauce with aromatic toasted bread crumble. A recipe that makes the most of simple ingredients, designed for those who love authentic cooking, carefully crafted in every detail.
Ingredients for 4 people
For the tagliolini:
- 250g plain (00) flour
- 50g durum wheat semolina
- 3 eggs
- A pinch of salt
For the green sauce:
- 1 bunch of fresh parsley
- 1 clove of garlic
- 30g desalted capers
- 3 anchovy fillets
- 40ml white wine vinegar
- 50ml Villa Dianella extra virgin olive oil
- Salt and pepper to taste
For the aromatic crumble:
- 80g stale bread
- 1 sprig of rosemary
- 1 sprig of thyme
- 1 tablespoon Villa Dianella extra virgin olive oil
- Salt and pepper to taste
Method
1. Tagliolini
In a bowl, mix the 00 flour and durum wheat semolina, then form a well. Add the eggs and a pinch of salt in the centre. Knead until you get a smooth, elastic dough. Cover with cling film and let it rest for 30 minutes. Roll out the dough into a thin sheet and cut into tagliolini.
2. Green sauce
Put the parsley, garlic, capers, anchovies and vinegar in a blender. Add the extra virgin olive oil and blend until you get a smooth sauce. Season with salt and pepper to taste.
3. Aromatic crumble
Chop the stale bread together with the rosemary and thyme. Heat a drizzle of oil in a pan, then toast the crumble until golden and crisp. Finish with salt and pepper.
4. Cooking and plating
Cook the tagliolini in salted water for about 2-3 minutes. Drain and toss them in a pan with the green sauce. Arrange on plates and add the toasted bread crumble for a crunchy touch.
